Crispy Buttermilk-fried Oyster Mushrooms

TIME 40 minutes
INGREDIENTS
For making the bacon:
2 cups (10-12 oz.) Oyster Mushrooms (2 big clusters)
1 cup buttermilk (or vegan buttermilk: combining 1 ½ Tbsp lemon juice + 1 ½ cups plain soy milk)
1.5 cups all-purpose flour
Seasoning Mix: 1 tsp. each of flaky salt, pepper, garlic powder, onion powder, smoked paprika, and cumin
1 tbsp oil of choice
1/2 tsp liquid smoke
1/2 tsp. salt
freshly ground black pepper to taste
preferred dipping sauce
Preferred oil for frying
INSTRUCTIONS
Preheat your air fryer to 375 degrees Fahrenheit.
Separate the Oyster mushrooms and coat each mushroom with buttermilk. Let them sit while you prep the breading.
Combine dry ingredients in a separate bowl. Spoon the mushrooms into the flour mixture, then repeat those steps (buttermilk and breading again.)
Add to a well-greased pan, and air fry in a single layer. Leave space between the mushrooms for maximum crispness. Cook for 5 minutes, brush with oil, then flip and cook for 5-10 more minutes or until golden brown and crispy.
Serve immediately with the dipping sauce of your choice.
