Crisp Maitake Mushrooms on a bed of Hummus
YIELD Serves 4
TIME 15 minutes
INGREDIENTS
3 tbsp. olive oil
4 oz. Maitake mushrooms
Chopped parsley for garnish
hummus of choice
Pita bread for serving
INSTRUCTIONS
Heat 3 tbsp. oil in a large skillet over medium-high heat. Add the Maitake mushrooms. Cook, tossing occasionally, allowing the mushroom to brown on each side. Cook until very crisp and dark golden, approximately 10 minutes. Transfer to a paper-towel-lined dish to drain, then sprinkle generously with salt while the mushrooms are still hot.
Spread the hummus onto a serving plate, and add crisp mushrooms on top. Garnish with parsley and cayenne, as well as a drizzle of olive oil.
