Shiitake Bacon BLT
YIELD Serves 2
TIME 40 minutes
INGREDIENTS
For making the bacon:
1/2 lb thinly sliced organic shiitake mushrooms (the thinner the better)
Olive oil spray
1/4 tsp liquid smoke
1/2 tsp sea salt
freshly ground black pepper to taste
For making the sandwich:
4 pieces of bread
1 Tomato
Mayo to taste
INSTRUCTIONS
Preheat oven to 375 degrees F
Combine the bacon ingredients in a bowl, and mix.
Spray oil over the mushrooms, and mix until all mushrooms are lightly coated. Don’t overspray, or you’ll get soggy, oily mushrooms!
Spread mushrooms across a lined cookie sheet in a single layer
Cook for about 30 minutes, stirring frequently with a spatula until lightly browned and crisp.
Compile your BLT to your personal preference, just be sure to use the good tomatoes!
